chicken dressing like Granny made. It did take me years to perfect it and yes, it is good!

 My Mountain Journey

What an excellent day it was. The temperature was almost perfect with a slight breeze and those Autumn skies; you know the ones, a bit overcast and grey. These are days for the kitchen! I had requests for an apple streusel and some chocolate chip cookies. A sweet girl came over a bit and our visit was amazing. Do you have favorite recipes? I have a tendency to 'tweak' recipes to make them my own. Start with a basic recipe and decide what you want to do with it. You can easily dress a meal up with seasonings alone. Limit that mess that hurts the body if used at all; the good stuff is from nature. Use that. Water. I mean seriously, have you read the ingredients in almond milk? How easy was it to convince people that adding chemicals and additives to their daily consumption was a good thing? It's everywhere now, people talk about the packaged foods being so bad for us all. They are in my opinion and, for me it's been mostly natural and organic always. There is no need to join a fad where folks are catching on and seeking out healthier options. Cooking can take 5-15 minutes longer but the end result beats the heck out of poor health, not to even mention the flavor. Without all the additives + the food is exceptional. We should not make this so hard. HAH

Get healthy! We can at least enjoy our food and appreciate it is not hurting us. To say that does not infer seaweed and kelp! HAH! We have foods given to us in nature and those foods are loaded with nutrients and flavor. did I mention, natural flavors? 

Tweak recipes to make them yours; add ingredients or flavors you like. Do not be afraid to try. I might add a bit of allspice to a loaf of cinnamon bread. You should try and with some of that good old home made butter! Let's talk more on recipes and remedies following. Join me and add your suggestions.

When I first designed my website, I had envisioned a nice, sleek and professional layout and look. As you can see, the reverse decision was made. Why? Let's see here...no having to scroll through endless copy which is most likely AI generated. Here, it's all, Yours Truly! Besides this is less messy and more fun. Why, unless there is considerable useful information is that necessary? What if my sole objective is the user page friendly  recipe or article, directions? Let's go right there.

How about we call it cutting out the Middle Man. That's kind of funny. I like it. In light of this mindset, the photos have links to other useful information or recipes you might be looking for. Be sure to check back regularly as new recipes and updates will be added in a timely manner.

Granny’s Cornbread and Chicken Dressing

To begin with, my methods may vary from yours but, the ingredients, etc., will be what you are interested in. Choose your chicken, do you want to use breasts, thighs or the whole chicken? I use what I have which is usually a quart or so of broth and chicken available to use. I like to use a whole bird to make broth…that stuff really is liquid gold, Folks. Use it. What matters is the richness of the flavor and yes, nutrition is there. I’m all about that.  I usually make a 9x11, sometimes only an 8x8, adjusting is only a matter of your taste. Sure, I could drag this recipe out and make you read three pages before the recipe, (HAH, laugh a little, it’s good for you) anyway, I prefer to get the recipe to you!

Cooked, deboned and diced chicken. I like thighs for recipes like this. For a 9x11 - 2-3 is ample. You do not need too much for the dressing, bits is what you are looking for.

Cornbread – I make mine fresh, crumble it up and begin! 

Mix together -  cornbread, chicken, celery (diced)  small onion (diced), Sage! As much as you all prefer; some like more some less, on their palates. You decide. Thai Basil if you have it, if not, get some, you can thank me later. The stuff is awesome! Salt and pepper. Add that rich broth. 

I know what good dressing should smell like, what it looks like being prepared so, I gauge when it's ready that way. It’s a mountain thing, or a me thing. More likely the latter. 

 

For more moist dressing, use more broth, for more dry, less broth. Just make sure you enjoy it!

 

Butter your casserole dish, pour prepared dressing mix into the casserole, bake at 350 for 1 hour or until golden brown.
